Orange Caramel Squares

This is based on a recipe that my mother used to make mixing cake crumbs and condensed milk together. However whenever I tried it it turned out a soggy mess so I made the condensed milk into caramel and here is the result.




Ingredients

I can condensed milk
200g butter or margarine
4 tablespoons golden syrup
400g digestive biscuits.
1+ 1/2 teaspoon orange essence.
100g icing sugar.

Method

Grease a 7x7 inch tin and line with greaseproof paper or baking parchment.
Reserving 4 biscuits break into small pieces.
Place the condensed milk, butter and golden syrup in a pan and bring to the boil stirring all the time.  Continue stirring and boiling until it becomes a medium toffee colour.
Mix in the broken biscuits and 1 teaspoon orange oil and press into the tin.
Make the icing by mixing the icing sugar with water to form a thick icing and adding 1/2 teaspoon of orange oil.  Spread over the cake.
Crush the remaining biscuits ( this can be done by whizzing them in a food processor) and sprinkle over the icing pushing them down gently to stick.
This is very sweet so cut into small pieces, peopla can always come back for more.
