Chocolate Praline

Commonly know in our family as Mr Ross cake because our builder - called Mr Ross- loved it.

Ingredients

200g digestive Biscuits
4 oz butter/margarine
1 rounded dessertspoon brown sugar- I use demerara
3 rounded dessertspoons drinking chocolate - NOT the instant type
1 1/2 tablespoon golden syrup
50g sultanas

150g chocolate to top.  Tis can be a dark, milk or a mixture.

Method

Break up the biscuits into small pieces, about the size of a 1p piece.  Don't worry if some break to small it won't matter.  Place in a bowl with the sultanas.
Melt together the other ingredients, except the topping chocolate.  When completely melted mix in with biscuits and sultanas.
Grease and line a tin approx 20x20 cm.  Smooth the mixture into the tin and put in the fridge.
Melt the chocolate in a bowl in the microwave and pour over the base.  Return to fridge.
